Rocky Road!!!

I {heart} Rocky-road

Fun, easy and very tasty, Rocky-road is sure to temp the taste buds of any sweets lover!
Another bonus with rocky-road is that you can switch and swap ingredients to suit your tastes.

I thought I would share one of my favorite rocky-road recipes and highly recommend you give it ago. I promise you will be talk of the party! (if you decide to share)


 


Basic Rocky-Road


Ingredients:


750g Cadbury Milk Chocolate
100g Marshmallows roughly chopped
1/2 cup Unsalted Chopped Peanuts
100g Allens Ripe Raspberries (Lollies)
1/4 cup Coconut shredded(optional)




Method:
  • Melt chocolate. My method is a heat proof bowl on a saucepan filled with about 2cm of water. Stir, stir, stir.... (You could always use the microwave option)
  • Once chocolate is all melted sit aside until chocolate feels the same as your body temp.(Don't want to melt all the yummy ingredients)
  • Line a slice tray (16 x 26 x 3 cm) with baking paper, leaving 2 cm hanging over each end.
  • Use scissors to cut marshmallows in half(you could also use mini marshmallows. Combine marshmallows, raspberry lollies, coconut and peanuts in a large bowl. Pour in melted chocolate and mix well to combine.
  • Spoon into prepared tray and refrigerate for at least 2 hours. When set, lift rocky road onto a chopping board and cut into any size pieces.

Note:
I enjoy to play around with the rocky-road recipe. You can swap lollies for cherries, turkish delight, rolo chocolate or even honeycomb. Ive tried them all and they work a treat. Also, I'm not a fan of peanuts, so you can use any nut's you like. I prefer to replace the nuts with about 8-10 Arnotts Milk Coffee Biscuits smash up to crumbs and chunks.
